Great as an appetizer, snack, or light meal. The cool lettuce adds a nice crunch to the sweet, mellow chicken mixture inside. This version of the chicken lettuce wrap has lower sodium than most. Each wrap is about 1 carb serving and has 14 grams of protein.

Ingredients

chicken breast (cooked, diced)
1 tablespoon
olive oil
3⁄4 cups
carrots (shredded)
1⁄2 cup
onions (chopped)
1 teaspoon
garlic (minced)
2 teaspoons
ginger (ground)

iceberg lettuce leaves
2 tablespoons
soy sauce (low sodium)
2 tablespoons
brown sugar
1 tablespoon
rice vinegar
1⁄4 cup
water

Instructions

  • Mix soy sauce, brown sugar, water, ginger, and rice vinegar together in a small bowl
  • Set stir fry sauce to the side
  • Heat olive oil over medium/low heat in skillet
  • Add garlic and cook for a couple minutes
  • Stir in carrots and onions
  • Cook till tender
  • Add in diced chicken and stir fry sauce
  • Once heated, scoop onto lettuce leaf
  • Serve and enjoy
